What’s For Dinner?

Here’s a glimpse into what we had for dinner this week!

Homemade Pepperoni Pizza – Our family LOVES pizza! Making our own helps save money (and calories) and we can make it however we want! This week I opted to use a frozen pre-made dough for the crust since we had cheerleading practice and were pressed for time! (I simply put dough in fridge overnight to defrost) Total cost for 2 pizzas = $5.24

  • Papa Sal’s frozen dough- $0.99 x 2 = $1.98
  • Sargento Shredded Cheese- on sale $0.99, bought 2 and used $1/2 coupon = $0.49
  • Tuttorosso Marinara Sauce – $0.88
  • Hormel Pepperoni – $2.99 – $0.55 coupon here (doubled) = $1.89

Steak, Pierogies & Mixed Vegetables – Another quick, easy, and delicious dinner your family will love. Instead of the usual steak and potatoes, I like to mix it up with the pierogies! They are delicious sauteed with butter and onions and some adobo sprinkled on top. For our steak, I have found that McCormick Marinades do wonders and make the meat so flavorful. (The leftovers make an awesome salad for lunch the next day!) Total Cost = $7.58

  • London Broil Steak – on sale $1.88 / lb = $3.66
  • McCormick Grill Mates Montreal Steak Marinade – $1.79
  • Poppy’s Pierogies – on sale $0.99
  • ShopRite mixed vegetables – 1/2 bag of  24 oz bag $2.29 = $1.14

Sausage, Spinach, Pasta Toss – I had gotten this dinner idea from something that I had at an aunt’s house a couple summers ago. I use sweet Italian sausage or turkey sausage and brown it up with an onion and garlic. Then, I add some good ol’ fashioned Italian seasoning (parsley, oregano, dried basil), spinach (I use frozen that I defrosted vs fresh ONLY because the frozen type tends to stick to the mixture better and makes it harder for my kiddo to pick off), a little salt and let it cook a bit to let the flavors blend. In a separate pot, I cook up some pasta and drain when al dente. Then, I combine and toss all in a large bowl. This serves MANY!! Bon Appetite! Total Cost –$3.37

Breakfast for Dinner – This is a family favorite in our house. Anytime Jasmine has her dinner choice, she almost always chooses breakfast for dinner. This is one variation that we do. Pancakes (with some caramel coffee creamer added for flavor), breakfast sausage, and hash browns. Sometimes we add eggs or switch in bacon, any which way we do it,  there are normally no complaints! Total Cost $3.65

Chicken & Biscuits – This is one of my fall favorites. I start out with 2 chicken breasts that I season and pan cook. I chop into bite size pieces and put in the bottom of casserole pan. In the same pan, I cook 3 large carrots, 2 stalks celery, and 1 onion (all chopped) with 1/2 cup chicken broth. I add in 2 cups fresh spinach and 1/2 bag of frozen vegetables, mix in 1 can chicken gravy and transfer to casserole pan on top of chicken. I prepare the biscuit mix and then drop tablespoon size biscuits on top of the mixture. I bake it for 10 minutes at 450 degrees until biscuits are cooked. Total Cost $7.15

  • ShopRite mixed vegetables – 1/2 bag of  24 oz bag $2.29 = $1.14
  • Shop Rite Chicken Gravy $0.50
  • Bisquick Mix – $2.49 – $0.50 coupon here (doubled), – $0.50 E-coupon here = $0.99 / 4 servings (estimated) = $0.25
